Comté is cave-aged, which explains why it's so easily enjoyed by candle light.

With small, scattered holes called "eyes," Comté has an intriguing, complex flavor that can include hints of apricot, chocolate, butter, cream, hazelnuts and toast. Enjoy Comté in cubes, on a sandwich, melted in fondue, or grated and sprinkled on your favorite dishes. Any way you like it, serve Comté with a dry white or light red wine.

Ingredients:

  • 1 soft cheese
  • 1 semi-soft cheese
  • 1 hard cheese
  • 1 blue cheese

Directions:

  • Allow the cheese to come to room temperature before serving. It should take around an hour. Slice and arrange your cheese clockwise from mild to strong. Garnish with fruit, nuts and sliced baguette.

  • 2 tablespoons shallots, sliced and quartered
  • 1/2 red bell pepper, chopped
  • 1/2 yellow bell pepper, chopped
  • 2 radishes, quartered
  • 1 bunch asparagus, cut into 1-inch pieces on diagonal
  • 2 tablespoons extra virgin olive oil
  • Salt and pepper
  • 12 eggs
  • 1/4 cup milk
  • 3/4 and 1/4 cups Comté cheese, grated
