Edam is a semi-hard, Dutch cheese that never spoils. At its youngest, Edam is mild, tangy and slightly salty. As it sits around, its flavor gets sharper and more developed. Mild Edam goes well with fruit such as peaches, melons and apricots. Aged Edam is typically enjoyed with pears and apples.
