Appearance Hard, yellow or brownish rind and pale yellow paste with large holes (1/4" to 1-1/4" in diameter)

Ingredients:

  • 1 soft cheese
  • 1 semi-soft cheese
  • 1 hard cheese
  • 1 blue cheese

Directions:

  • Allow the cheese to come to room temperature before serving. It should take around an hour. Slice and arrange your cheese clockwise from mild to strong. Garnish with fruit, nuts and sliced baguette.

  • 1/4 cup red wine vinegar
  • 1/2 tablespoon fresh thyme, chopped
  • 1/2 teaspoon paprika
  • 1 bay leaf

  • 2 cup olive oil
  • 2 shallots, peeled, sliced thinly on a mandolin
  • Pinch of salt

  • 1 onion
  • 20 g of half-salted butter
  • 6 slices of bacon
  • 50 g grated Emmental cheese
  • 10 cl of milk
  • Sea salt and freshly ground pepper to taste

1 white leek
40 g half-salted butter
1 short crust pastry or pie dough (can use store bought)
12 pieces of shrimp
1 slice of smoked salmon
3 eggs
8 cl of whole milk
5 cl of fish stock
8 cl of heavy cream 
1 pinch of nutmeg
6 scallops
30 g of grated Emmental cheese
Salt and freshly ground pepper to taste

  • 280 g long grain rice
  • 50 g butter
  • 3 eggs
  • 2 tbsp. potato starch
  • ½ bunch of chopped parsley
  • 80 g diced Emmental cheese
  • 80 g bread crumbs
  • Spices of your choice
  • Salt and freshly ground pepper to taste
