Saint-Nectaire

Ingredients:

  • 1 soft cheese
  • 1 semi-soft cheese
  • 1 hard cheese
  • 1 blue cheese

Directions:

  • Allow the cheese to come to room temperature before serving. It should take around an hour. Slice and arrange your cheese clockwise from mild to strong. Garnish with fruit, nuts and sliced baguette.

  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon minced garlic
  • 1 teaspoon minced shallots
  • 1/2 pound mixed mushrooms, thinly sliced (chanterelle, porcini, oyster, shiitake)
  • Sea salt and freshly ground pepper to taste
  • 1 tablespoon chopped parsley
  • 5 ounces Raclette cheese, grated
  • 5 ounces of Saint-Nectaire cheese, crumbled
  • 2 tablespoons white truffle oil
