According to history, Valençay was originally a tall pyramid-shaped cheese. Since it was often sent to Napoleon, Talleyrand, Napolean Foreign Minister, had the cheese “decapitated” in order not to remind Napoleon defeat in Egypt.
Production & Aging ripened for at least 10 days and can be stored in the cellar for up to 5 weeks.
