Pineapple and Comté Skewers

Pineapple and Comté Skewers


2 tablespoons chipotle powder

1 teaspoon salt

2 tablespoons sugar

1 cup chopped fresh pineapple (½-inch cubes)

16 fresh mint leaves

1 cup chopped Comte (½-inch cubes)

16 wooden or metal skewers


In a small bowl, stir together the chipotle powder, salt, and sugar. Sprinkle all but 1 tablespoon of the mixture over the pineapple cubes.

Skewer the pineapple, mint leaf, and Comte cubes in an alternating pattern on the skewers. Sprinkle the reserved 1 tablespoon of the chipotle mixture over the skewers and serve.
